The core of our business has always been about the food. Our menu is simply comprised of a few scratch-made, high quality Italian salads, Romana pizzas, and pastas.
Our unique salad selection celebrates each season’s offerings, balanced vinaigrettes, and textural contrast. Watermelon radish, agro dolce vinaigrette, toasted pumpkin seeds, baby kale, and other amazing ingredients that were previously reserved for fine dining Italian restaurants, are showcased daily at Levetto!
A Romana style pizza (or Walkingstyle Pizza) is based on an authentic and highly technical dough that is indigenous to the ancient Italian city. Where a typical pizza dough is approximately 50% water to flour, our incredible Romana dough is 85% water to flour! The amazingly wet dough is folded over itself several times to create pockets of air bubbles; the end product resulting in a light and fluffy interior with a crispy bottom. Our dough is shaped by hand into our signature rectangular shape, then par-baked to streamline the cooking process to order.
Our pizzas are topped with the kind of unique toppings and flavor combinations that guests can only experience at Levetto, and we’re committed to using the finest ingredients. Fior di Latte, smoked prosciutto, fresh basil, and truffle oil adorn different varieties of our pizzas, creating delicious profiles of flavour. Topped to order, our Romana pizzas are then cooked in imported Moretti ovens, which are showcased in our open kitchens.
Each morning, at least six different Roman pasta shapes are extruded fresh from our imported Italian machines. By combining a few simple ingredients (flour, egg, and water) and using a simple technique, we’re proud to offer our guests a perfectly al dente pasta each time. Beautiful spaghetti, bucatini, tagliatelle, rigatoni, cavatelli, and trecce are extruded in our open kitchen, to the delight of our guests. Each noodle or shape is paired perfectly to honour Roman tradition, while simultaneously creating some new dishes with a Levetto twist.
