If you are familiar with the French bistro called La Regalade which is tucked away in West Vancouver, then you may recognize the new owner of Raye as the former sous chef/pastry chef from Regalade. He was at Regalade doing pastry and dessert for quite sometime when he decided it was time for a change. He spent two years in Paris and London learning from the best on how to do pastry the right way. There are lots of pastry shops around Vancouver, but to be honest, there is no pedigree working the dough in the back. If you are only used to store boughten croissant or dessert, then you are in for a pleasant surprise. Raye's croissants alone are worth making a trip across 3 districts. I came for lunch and had a nice light smoked salmon/caper/cream cheese brioche sandwich, and it was, in the words of Mr. Gordon Ramsay, "expletive delicious". I haven't tried everything yet, but I can safely say that from sampling the croissant, brioche, pan chocolate and lemon tart, that everything else is bound to be equally as good. When it comes to real French pastry, this guy gets it right all the way through.
