I have tried many different coffee bar over the years in the Vancouver downtown area and I must say, I have finally been able to find a better cup of coffee at Solaris Coffee. They serve Italian blend coffee which makes them different from most of the coffee bar. Although I would need to drive over the Burrard bridge to get my cup of coffee, I think it is worth the little drive.
A plus point for this coffee bar is the store interior setting. The owner of this store has setup a huge marine fish aquarium tank with quite a variety of fishes in it. I do not know much about fishes but it is definitely a relaxing moment to watch them.
