Spicy bold flavours

I've been to this restaurant many times in the past and yesterday night I went again with my aunties and uncle. The food like usual is very good. We ordered:
1. pea shoots and another type of vegg that was stir fried with garlic. The flavours was alright, the good part is that they didn't use much oil.
2. Pork strips that we actually can wrap in a prepared crepes. I find this to be alright only. Though my aunties crave this all the time.
3. Spicy fish fillets with vegg soaked in red chilli oil. The fish fillets were very tender, soft, and silky. The flavours were bang on. Just the right amount of spicyness which gives it the bold tasty flavours. It's perfect for me cuz I love heat in my dishes. People who don't like it spicy should ask for non-spicy, though I dont' think they make it.
4. Spicy Lamb stir-fry. This has more Sechuan's peppercorn so that it would numb the tastebuds a little. But, it's also very tasty and flavourful and definitely one of my favorites.
5. Deep fried whole duck. It's not spicy so more people can eat this. It's crunchy, tender, and flavour was good. Not too salty but needs a little more sugar and pepper to enhance the taste a little I think.
6. Pork intestines in a pot. It was alright, the flavour was pretty good and spicy but I just wasn't a big fan of pork intestines.
7. WuXi Pork Ribs. Braised pork ribs in somewhat sweet and salty sauce on blanched spinach. The spinach was cooked well, not over cooked. N, the pork ribs were super tender, fall of bones softness.

Last night when we were there, they only had 2 servers for over 6 tables of 6 or more people. I understand that 2 servers can't serve all tables at the same time without waiting, but it isn't an excuse to give us an ignorant attitude. Our table asked for 6 glasses and we waited for 15 mins but the server hasn't arrived yet so we asked again and that same server answered annoyedly that she's very busy and still didn't give us the glasses until another 10 mins after. When we said that we have been waiting for the pork intestine dish for over an hour, the server argued that it wasn't put in the order cuz we were arguing whether or not to order it. I mean, how hard is it to say sorry and keep your customers happy. Service is crazy here!!!
I will still come back for the food despite the bad service that I experienced last night. And also cuz I know that the owner was actually trying to make the service better by rushing the servers to provide me with what I needed (I heard this cuz I went to the cashier to find my server and the owner was there to rush her).
