With little to no competition, I guess they simply do not care

As some others have mentioned, you'll probably receive better quality fish and chips if you come here at a slow time - say early afternoon during the week.
Fish is often poorly butchered scraps covered in soggy (and usually undercooked) batter. The chips have been harsh and frankly disgusting each time I've eaten here.
The service here is a disaster. Each times I have made an order for three or more people I have been overcharged/something has been mixed up. The 'American Apparel' attitude of the staff is better accustomed to working at a quiet coffee shop, not a busy food establishment.
With the equally popular (and even lesser quality) frozen fish and chips restaurant on Granville Island providing Go Fish! with its only competition, I think the state of this place comes down to a simple 'who cares?'. The crowds will still line up regardless of the quality.
Edmonton has great fish and chip shops with pride and quality - why not central Vancouver?
