As a matter of choice Bin 941 is one I often forget about because it is very small and a hit or miss as to getting in when I need or want to eat. Just happens that we thought about it and being close, we thought the attempt was worth the effort.
Service was slow but understandable in a small crowded establishment, no problem, part of the charm. Charm aside, ordering of my meal was and is my issue. I found something that I wished to try and ordered it assuming that a simple substitution to one of the other side items, on the menu, should offer no major issue for the establishment. I have a strong aversion to certain vegetables and am accommodated in restaurants across the board. I asked for the simple, in my mind, substitution and was told that I could not make any substitutions. I then requested that the chef avoid plating the sides to my meat - that was also turned down.
The long and the short of it is that I respect an artist's desire to keep the essence of his or her creative integrity but all I asked for was a side to not be placed on my plate. The customer is still the one that should be satisfied despite the creative integrity of the artist but if that is not the case then don't make me pay for it. Next time I won't of course because I know that my satisfaction and dining experience is subordinate to the creative energy of this Chief.
